Rajasthani Kadhi (Plain Besan-Buttermilk Curry)

Ingredients
- 1.5 cups sour curd
- 2 cups water
- 3 tbsp besan
- 1/4 tsp turmeric
- 1/2 tsp red chili powder
- 2 tbsp ghee
- 1 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/4 tsp fenugreek seeds
- 2 dried red chilies
- 6 curry leaves
- 2 tbsp chopped cilantro
- 1 tsp salt
How to cook it
- Whisk the curd with the water and besan until completely smooth, no lumps.
- Add the turmeric and chili powder, then bring the mixture to a boil over medium heat, stirring constantly so it doesn't split.
- Lower the heat and simmer for 15 minutes, stirring now and then, until the raw besan smell disappears and the kadhi thickens slightly.
- Heat the ghee in a small pan and add the mustard seeds, cumin seeds, fenugreek seeds, and dried red chilies.
- Once they crackle, add the curry leaves, then pour the tempering over the kadhi.
- Season with salt, finish with cilantro, and serve hot with steamed rice.
