Ingredients

  • 1.25 lb white fish fillets (cod, hake, or pollock)
  • 1.5 lb new potatoes, halved
  • 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/4 tsp black pepper

How to cook it

  1. Put the potatoes in a steamer basket over boiling water, cover, and steam for 12 minutes until almost tender.
  2. Season the fish fillets with the salt and pepper, lay them on top of the potatoes in the steamer, and steam for 6 to 8 minutes more, until the fish flakes easily.
  3. Meanwhile, whisk the olive oil with the juice of half the lemon and a pinch of salt to make a light dressing, and cut the remaining lemon half into wedges.
  4. Plate the fish and potatoes and drizzle the lemon dressing over the top.
  5. Scatter the parsley over everything and bring it to the table with the lemon wedges.
