- 1.25 lb ground beef
- 2.5 lb potatoes, peeled and cut into chunks
- 1 onion
- 2 garlic cloves
- 4 tbsp butter
- 1/2 cup whole milk
- 1 tbsp olive oil
- 1 tbsp tomato paste
- 1/2 cup beef broth
- 1/2 cup grated Gruyere cheese
- 1.5 tsp salt
- 1/2 tsp black pepper
- 1 pinch ground nutmeg
How to cook it
- Preheat the oven to 400 F, then put the potatoes in a large pot of salted water, bring to a boil, and cook until fork-tender, about 15 minutes, then drain.
- Meanwhile, heat the olive oil in a skillet and cook the chopped onion and garlic over medium heat until soft, about 5 minutes, then add the ground beef and cook, breaking it up, until browned, about 8 minutes.
- Stir in the tomato paste and beef broth, season with half the salt and the pepper, and simmer for 5 minutes until the mixture thickens into a moist, saucy mince the way leftover Sunday roast would.
- Mash the drained potatoes with the butter, milk, remaining salt, and the nutmeg until smooth.
- Spread the beef mixture in a baking dish, top with an even layer of the mashed potatoes, scatter the cheese on top, and bake for 15 to 20 minutes until golden and bubbling at the edges.
- Let the hachis parmentier rest for 5 minutes before serving.
