Ingredients

  • 4 tbsp olive oil
  • 1 onion
  • 3 garlic cloves
  • 1 green bell pepper
  • 1 red bell pepper
  • 2 zucchini
  • 1 eggplant
  • 4 ripe tomatoes
  • 1 bay leaf
  • 1 pinch sugar
  • 1 tsp salt

How to cook it

  1. Heat the olive oil in a wide pan and cook the chopped onion and garlic over medium heat until soft, about 6 minutes.
  2. Add the diced green and red peppers and cook for 8 minutes until they begin to soften.
  3. Stir in the diced zucchini and eggplant and cook for 10 minutes, then add the chopped tomatoes, bay leaf, and a pinch of sugar and simmer uncovered for 20 minutes, stirring now and then, until the vegetables collapse into a thick stew.
  4. Season with the salt, fish out the bay leaf, and let the pisto rest a few minutes off the heat so it settles before serving warm or at room temperature.
