- 4 carrots
- 2 cups frozen peas
- 1 small onion
- 2 tbsp olive oil

How to cook it

- Stir in the peas and cook uncovered for 5 more minutes, until the peas are bright green and heated through and most of the broth has cooked away.
- Remove the thyme sprig and season with the salt and pepper.
- Spoon into a warm dish alongside roast chicken or a simple pan-fried fillet.
