Pates Bolognaise (Pasta with Beef Bolognese Sauce)
Pates Bolognaise (Pasta with Beef Bolognese Sauce) is French home cooking, eaten at dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
- 1 lb ground beef
- 12 oz pasta (tagliatelle or spaghetti)
- 28 oz canned crushed tomatoes
- 1 onion
- 2 garlic cloves
- 1 carrot
- 1 celery stalk
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp salt
- 1/4 tsp black pepper
- 1/2 cup grated Parmesan cheese
How to cook it
- Heat the olive oil in a large pot and cook the finely chopped onion, garlic, carrot, and celery over medium heat until soft, about 8 minutes.
- Add the ground beef and cook, breaking it up with a spoon, until it is no longer pink, about 6 minutes.
- Stir in the crushed tomatoes, oregano, salt, and pepper, bring to a simmer, and cook uncovered for 15 minutes, stirring occasionally, until the sauce thickens.
- Meanwhile, cook the pasta in a large pot of salted boiling water until al dente, then drain, reserving a splash of the cooking water.
- Toss the pasta with the bolognese sauce, loosening it with a little of the reserved pasta water if needed, and serve hot with the grated cheese on top.
