Onion Chutney

Ingredients

  • 2 cups shallots
  • 4 dried red chilies
  • 1 tbsp tamarind pulp
  • 2 tbsp roasted chana dal
  • 4 garlic cloves
  • 1/2 tsp mustard seeds
  • 1/2 tsp urad dal
  • 10 curry leaves
  • 2 tbsp neutral oil
  • 3/4 tsp salt

How to cook it

  1. Heat half the oil in a pan and cook the shallots, garlic, and dried red chilies until softened and lightly browned, about 8 minutes.
  2. Cool slightly, then blend with the roasted chana dal, tamarind pulp, salt, and a splash of water into a coarse chutney.
  3. Heat the remaining oil, let the mustard seeds pop, then add the urad dal and curry leaves and let them turn golden.
  4. Pour the tempering over the chutney and serve.
