  • 1/2 tsp salt
  • 1/4 tsp black pepper

How to cook it

  1. Crack the eggs into a bowl, season with the salt and pepper, and beat well with a fork until fully blended.
  2. Melt the butter in a nonstick skillet over medium-high heat until it foams but before it browns.
  3. Pour in the eggs all at once and let them set for a few seconds, then stir gently with a fork while shaking the pan, drawing the edges toward the center.
  4. As soon as the eggs are just set but still glossy on top, about 1 to 2 minutes, stop stirring and let the base finish setting for a few more seconds.
  5. Fold the omelette in thirds with the spatula, slide it onto a plate, and serve immediately while it is still soft inside.
