Lentil Sloppy Joes

Ingredients
- 1.5 cups brown lentils
- 1 tbsp olive oil
- 1 onion
- 3 garlic cloves
- 1 green bell pepper
- 15 oz tomato sauce
- 2 tbsp tomato paste
- 1/4 cup ketchup
- 1 tbsp brown sugar
- 1 tbsp yellow mustard
- 1 tbsp chili powder
- 1 tsp smoked paprika
- 2.5 cups vegetable broth
- 4 hamburger buns
- 1 tsp salt
- 1/2 tsp black pepper
How to cook it
- Rinse the lentils.
- Heat the olive oil in a saucepan over medium and cook the onion, garlic, and bell pepper until soft, about 6 minutes.
- Stir in the chili powder and smoked paprika for 30 seconds, then add the lentils and broth and bring to a boil.
- Reduce to a simmer, cover, and cook until the lentils are tender, about 22 minutes.
- Stir in the tomato sauce, tomato paste, ketchup, brown sugar, mustard, salt, and pepper and simmer uncovered until thick and saucy, about 8 minutes.
- Pile the mixture onto the buns and serve.
