Ingredients

  • 3 lb live mussels, scrubbed and debearded
  • 2 shallots, finely chopped
  • 2 garlic cloves, minced
  • 1 cup dry white wine
  • 2 tbsp butter
  • 3 tbsp fresh parsley, chopped
  • 1.5 lb frozen French fries
  • 1/4 tsp black pepper

How to cook it

  1. Preheat the oven to 425 F and spread the frozen fries in a single layer on a baking sheet, baking for 18 to 20 minutes, turning once, until golden and crisp.
  2. Meanwhile, melt the butter in a large pot and cook the shallots and garlic over medium heat until softened, about 3 minutes.
  3. Pour in the white wine, bring to a simmer, add the mussels, cover, and cook for 5 to 6 minutes, shaking the pot once or twice, until the mussels open.
  4. Discard any mussels that stay closed, then stir the parsley and black pepper into the broth.
  5. Ladle the mussels and their broth into deep bowls and serve immediately with the hot fries alongside.
