Ingredients

  • 1 lb cluster beans
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp turmeric
  • 1/2 tsp red chili powder
  • 1 tbsp besan
  • 1/2 tsp jaggery
  • 1 tsp lemon juice
  • 2 tbsp chopped cilantro
  • 3/4 tsp salt
  • 1/3 cup water

How to cook it

  1. Heat the oil in a pan and add the mustard seeds and cumin seeds, letting them crackle.
  2. Add the cluster beans, turmeric, chili powder, and salt, and toss well.
  3. Add the water, cover, and cook over medium-low heat, stirring occasionally, until the beans are tender, about 18 to 20 minutes.
  4. Sprinkle the besan over the beans and toss quickly so it coats evenly without forming lumps, then cook uncovered for 3 to 4 minutes.
  5. Stir in the jaggery and lemon juice, finish with cilantro, and serve hot with rotli.
