Corn Chowder

Ingredients

  • 5 cups corn kernels
  • 1 lb Yukon gold potatoes
  • 3 tbsp butter
  • 1 onion
  • 2 celery stalks
  • 3 garlic cloves
  • 3 tbsp all-purpose flour
  • 3 cups vegetable broth
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

How to cook it

  1. Melt the butter in a pot over medium and cook the onion, celery, and garlic until soft, about 6 minutes.
  2. Sprinkle in the flour and thyme and cook 1 minute, then slowly whisk in the broth and milk.
  3. Add the diced potatoes and half the corn, then simmer until the potatoes are tender, about 15 minutes.
  4. Blend a couple of cups of the soup and stir it back in to thicken, then add the remaining corn.
  5. Stir in the cream and warm through, then season with the salt and pepper.
  6. Ladle into bowls and serve.
