Chicken Caesar Salad

- 2 chicken breasts
- 2 romaine hearts
- 1/2 cup grated parmesan
- 1 cup croutons
- 2 tbsp olive oil
- 4 anchovy fillets
- 1 egg yolk
- 2 garlic cloves
- 2 tbsp lemon juice
- 1/4 cup olive oil for dressing
- 1/2 tsp black pepper
How to cook it
- Rub the chicken with 2 tbsp olive oil, salt, and pepper, then grill or pan-sear over medium-high heat until 165F inside, about 6 minutes per side; rest, then slice.
- Whisk the egg yolk, minced anchovies, garlic, and lemon juice, then stream in 1/4 cup olive oil to emulsify and stir in half the parmesan.
- Toss the romaine with the dressing until evenly coated.
- Top with the sliced chicken, croutons, and remaining parmesan.
