  • 1.25 lb ground beef
  • 1 tbsp olive oil
  • 1 onion
  • 3 garlic cloves
  • 2 tbsp tomato paste
  • 2.5 cups elbow macaroni
  • 2.5 cups beef broth
  • 1/2 cup whole milk
  • 1.5 cups shredded cheddar
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper

How to cook it

  1. Heat the olive oil in a large skillet over medium-high and brown the ground beef with the onion and garlic, about 7 minutes.
  2. Drain excess fat, then stir in the tomato paste, ketchup, mustard, and paprika for 1 minute.
  3. Add the dry macaroni, broth, milk, salt, and pepper and bring to a simmer.
  4. Cover and cook over low heat, stirring occasionally, until the pasta is tender and the sauce clings, about 14 minutes.
  5. Turn off the heat and stir in the cheddar until melted and glossy.
  6. Let stand 3 minutes to thicken, then serve.
