Puchero Andaluz (Andalusian Chickpea and Meat Stew)

Ingredients
- 2.5 cups dried chickpeas (soaked overnight)
- 1 lb chicken thighs
- 8 oz beef shank
- 4 oz morcilla
- 3 oz tocino
- 2 potatoes
- 2 carrots
- 1 leek
- 2 cups chopped cabbage
- 1 small handful fresh mint
- 1 cup fine soup noodles
- 1 tsp salt
How to cook it
- Put the soaked chickpeas, the chicken, the beef, and the tocino in a large pot with plenty of water, bring to a boil, and skim off the foam.
- Lower the heat and simmer gently for about an hour, then add the carrots, leek, and potatoes and cook for 30 minutes more.
- Add the cabbage and the morcilla for the last 20 minutes so the cabbage softens without overcooking the sausage.
- Strain off some of the broth into a separate pot, bring it back to a boil, and cook the fine noodles in it with a sprig of mint for a fragrant first-course soup.
- Season the pot with the salt and bring the meal to the table in the traditional way: the minty noodle broth first, then the chickpeas, vegetables, and meats together.
