Poulet Roti (French Roast Chicken)

Ingredients
- 4 lb whole chicken
- 3 tbsp butter, softened
- 4 garlic cloves
- 4 sprigs fresh thyme
- 1 lemon
- 1 tbsp olive oil
- 1.5 tsp salt
- 1/2 tsp black pepper
How to cook it
- Preheat the oven to 425 F and pat the chicken completely dry with paper towels.
- Rub the softened butter all over the skin and inside the cavity, then season generously with the salt and pepper.
- Stuff the cavity with the garlic cloves, thyme sprigs, and the lemon cut in half, then tie the legs together with kitchen string.
- Drizzle the olive oil over the skin and roast the chicken breast side up for about 70 to 80 minutes, basting once or twice with the pan juices, until the skin is deep golden and a thermometer in the thickest part of the thigh reads 165 F.
- Let the chicken rest for 10 minutes before carving so the juices settle, and serve with the pan juices spooned over the top.
