  • 1.5 cups dried white beans (soaked overnight)
  • 3 potatoes
  • 4 cups chopped turnip greens
  • 6 oz chorizo
  • 4 oz lacon
  • 2 oz unto
  • 1 onion
  • 2 garlic cloves
  • 1 tsp sweet paprika
  • 1 tsp salt

How to cook it

  1. Put the soaked beans, the lacon, and the unto in a large pot with the whole onion and garlic, cover generously with water, and bring to a boil, skimming the foam.
  2. Lower the heat and simmer gently for about 45 minutes, until the beans are nearly tender.
  3. Add the potatoes and the chorizo and cook for another 20 minutes.
  4. Stir in the chopped turnip greens and cook until they are tender and have taken on the broth's flavor, about 15 minutes more.
  5. Stir in the paprika, season with the salt, and ladle the beans, greens, and sliced meats together into deep bowls.
