Ingredients
- 1.5 cups dried white beans (soaked overnight)
- 3 potatoes
- 4 cups chopped turnip greens
- 6 oz chorizo
- 4 oz lacon
- 2 oz unto
- 1 onion
- 2 garlic cloves
- 1 tsp sweet paprika
- 1 tsp salt
How to cook it
- Put the soaked beans, the lacon, and the unto in a large pot with the whole onion and garlic, cover generously with water, and bring to a boil, skimming the foam.
- Lower the heat and simmer gently for about 45 minutes, until the beans are nearly tender.
- Add the potatoes and the chorizo and cook for another 20 minutes.
- Stir in the chopped turnip greens and cook until they are tender and have taken on the broth's flavor, about 15 minutes more.
- Stir in the paprika, season with the salt, and ladle the beans, greens, and sliced meats together into deep bowls.
