Pochas Viudas (Stewed Fresh White Beans, Meatless)
Pochas Viudas (Stewed Fresh White Beans, Meatless) is Spanish home cooking, eaten at lunch. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
- 4 cups fresh shelled pochas beans
- 1 green bell pepper
- 1 onion
- 2 garlic cloves
- 1 tomato
- 1 tsp sweet paprika
- 1 bay leaf
- 3 tbsp olive oil
- 4 cups vegetable broth
- 1 tsp salt
How to cook it
- Heat the olive oil in a pot and cook the chopped onion, green pepper, and garlic over medium heat until soft, about 8 minutes.
- Stir in the chopped tomato and paprika and cook for 2 minutes until it deepens in color.
- Add the pochas beans, the bay leaf, and the broth, bring to a gentle boil, then lower the heat and simmer uncovered for about 35 minutes, until the beans are creamy but still hold their shape.
- Season with the salt, fish out the bay leaf, and serve hot in wide bowls with the broth slightly thickened; the viudas or widowed version takes no meat at all, letting the fresh beans carry the whole pot on their own.
Serve it with

When to cook it
Pochas Viudas (Stewed Fresh White Beans, Meatless) takes about 60 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at lunch. It is at its best in the fall, which is when what goes into it is worth buying.
