- 4 cups dosa batter (rice and urad dal, store-bought or home-fermented)
- 4 tbsp neutral oil
- 2 tbsp water
- 1/2 tsp salt
How to cook it

- Heat a flat cast-iron or nonstick griddle over medium-high and test readiness with a few drops of water, which should sizzle and evaporate right away.
- Pour a ladle of batter in the center and spread it outward in a thin spiral with the back of the ladle to form a large, even circle.
- Drizzle a teaspoon of oil around the edges and cook until the underside turns golden and crisp, about 2 minutes, without flipping for the classic version.
- Fold in half or roll up and serve hot, straight off the griddle.
