Ingredients

  • 8 eggs
  • 3 onions
  • 1 tomato
  • 1 tbsp ginger garlic paste
  • 15 curry leaves
  • 3 tbsp coconut oil
  • 1.5 tsp Kashmiri chili powder
  • 1/2 tsp turmeric
  • 1 tsp ground coriander
  • 1/2 tsp garam masala
  • 1/2 tsp black pepper
  • 3/4 tsp salt

How to cook it

  1. Hard boil the eggs, cool, peel, and halve them.
  2. Heat the coconut oil in a wide pan and let the curry leaves crackle, then add the onions and cook low and slow, stirring often, until deeply caramelized, about 15 minutes.
  3. Stir in the ginger garlic paste, turmeric, chili powder, and ground coriander, then add the chopped tomato and cook until it breaks down, about 5 minutes.
  4. Season with salt and black pepper, add a splash of water, and simmer until the masala is thick and glossy.
  5. Nestle the halved eggs into the masala, sprinkle with garam masala, and serve warm with rice or bread.
