Ingredients

  • 4 cups cooked rice, cooled
  • 2 lemon
  • 1/2 tsp turmeric
  • 1/3 cup peanuts
  • 1 tbsp chana dal
  • 1 tbsp urad dal
  • 1 tsp mustard seeds
  • 2 green chilies
  • 2 dried red chilies
  • 15 curry leaves
  • 3 tbsp neutral oil
  • 1/4 cup chopped cilantro
  • 1 tsp salt

How to cook it

  1. Spread the cooked rice out on a tray to cool completely so the grains stay separate, then fluff it gently with a fork.
  2. Heat the oil in a wide pan and let the mustard seeds pop, then fry the peanuts, chana dal, and urad dal until golden.
  3. Add the green chilies, dried red chilies, curry leaves, and turmeric and let them sizzle for a few seconds.
  4. Add the rice and salt and toss gently over low heat until evenly coated and warmed through.
  5. Remove from heat, squeeze in the lemon juice, and toss again before serving, so the citrus stays bright.
