Cottage Pie

Ingredients

  • 1.5 lb ground beef
  • 1 tbsp olive oil
  • 1 onion
  • 3 garlic cloves
  • 2 carrots
  • 1 celery stalk
  • 2 tbsp all-purpose flour
  • 2 tbsp tomato paste
  • 1.5 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 cup frozen peas
  • 2 lb russet potatoes
  • 4 tbsp butter
  • 1/2 cup whole milk
  • 1/2 cup shredded cheddar
  • 1 tsp salt
  • 1/2 tsp black pepper

How to cook it

  1. Peel and boil the potatoes in salted water until tender, about 18 minutes, then mash with the butter, milk, and half the salt.
  2. Heat the oven to 400F and warm the olive oil in an oven-safe skillet over medium-high.
  3. Brown the ground beef, then add the onion, garlic, carrots, and celery and cook 6 minutes.
  4. Stir in the flour and tomato paste for 1 minute, then pour in the broth and Worcestershire and simmer until thick, about 8 minutes; stir in the thyme, peas, and remaining salt.
  5. Spread the mashed potatoes over the filling and top with the shredded cheddar.
  6. Bake until the top is golden, about 25 minutes, then rest 5 minutes before serving.
