Chicken Cobb Salad

Chicken Cobb Salad is American home cooking, eaten at lunch. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.

30 min Medium Low carb Gluten free

Ingredients

  • 2 romaine hearts
  • 2 chicken breasts
  • 6 slices bacon
  • 4 large eggs
  • 1 avocado
  • 1 cup cherry tomatoes
  • 3/4 cup crumbled blue cheese
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper

How to cook it

  1. Hard-boil the eggs, then cool, peel, and quarter them.
  2. Cook the bacon until crisp, drain, and crumble it.
  3. Season the chicken with salt and pepper and pan-sear over medium-high until 165F inside, about 6 minutes per side, then rest and dice.
  4. Whisk the olive oil, red wine vinegar, dijon, salt, and pepper into a dressing.
  5. Chop the romaine and spread it on a platter, then arrange the chicken, bacon, egg, avocado, tomatoes, and blue cheese in rows on top.
  6. Drizzle with the dressing just before serving.

When to cook it

Chicken Cobb Salad takes about 30 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at lunch. Nothing in the calendar rules it out, so it is a year round dish.
