Classic Pot Roast

Ingredients

  • 3 lb chuck roast
  • 1.5 lb baby potatoes
  • 4 carrots
  • 1 onion
  • 3 celery stalks
  • 4 garlic cloves
  • 3 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 3 tbsp all-purpose flour
  • 2 tbsp tomato paste
  • 2 thyme sprigs
  • 1 bay leaf
  • 3 tbsp neutral oil
  • 1 tsp salt
  • 1/2 tsp black pepper

How to cook it

  1. Heat the oven to 300F. Season the roast with salt and pepper and dredge lightly in the flour.
  2. Sear the roast in the oil in a Dutch oven over medium-high heat until browned on all sides, about 10 minutes, then remove.
  3. Cook the onion, celery, and garlic in the drippings for 5 minutes, then stir in the tomato paste.
  4. Return the roast, add the broth, Worcestershire, thyme, and bay leaf, cover, and braise in the oven for 2.5 hours.
  5. Add the potatoes and carrots and braise until everything is fork-tender, about 45 minutes more.
  6. Rest the roast, then slice and serve with the vegetables and thickened gravy.
