Chicken Pot Pie

Ingredients
- 1.25 lb boneless skinless chicken breasts
- 2 refrigerated pie crusts
- 4 tbsp butter
- 1/3 cup all-purpose flour
- 1.5 cups whole milk
- 1.5 cups chicken broth
- 2 carrots
- 1 cup frozen peas
- 2 celery stalks
- 1 onion
- 1 large egg
- 1 tsp salt
- 1/2 tsp black pepper
How to cook it
- Heat the oven to 400F and fit one pie crust into a deep 9-inch pie dish.
- Melt the butter in a large skillet and soften the onion, carrots, and celery, about 6 minutes.
- Stir in the flour and cook 1 minute, then whisk in the broth and milk and simmer until thickened, about 4 minutes.
- Add the diced chicken and peas and cook until the chicken is done, about 8 minutes, then season with salt and pepper.
- Pour the filling into the crust, top with the second crust, crimp the edges, and cut a few vents.
- Brush with beaten egg and bake until the crust is deep golden, about 35 minutes, then rest 10 minutes before serving.
